Description
The Gigante Liscio (meaning “Giant Smooth”) is a classic Italian heirloom tomato that lives up to its name. Known for producing massive, globe-shaped maincrop salad fruits, this variety is a favourite for those who want serious weight and traditional flavour. Unlike many ribbed beefsteaks, the Gigante Liscio is prized for its smooth, uniform skin and deep red color, making it as beautiful as it is delicious.
Key Characteristics
-
Fruit Type: Large Beefsteak
-
Flavour Profile: Perfectly balanced; high sugar content with just enough acidity for a rich, “old-fashioned” tomato taste.
-
Texture: Meaty and dense with very small seed cavities, making it ideal for slicing.
-
Growth Habit: Indeterminate (Vine); requires sturdy support as the plants can reach 2m+ and the fruits are heavy.
UK Growing Tips
Growing “giants” in the UK requires a bit of strategy to combat our shorter summers and unpredictable light levels.
-
Location is Everything: While they can be grown outdoors in a very sheltered, south-facing spot in the South of England, a greenhouse or polytunnel is highly recommended for the best results in the UK.
-
Support the Weight: Use strong stakes or heavy-duty cages. As the fruits develop, you may even need to support individual trusses with soft twine or “truss hangers” to prevent the heavy clusters from snapping the main stem.
-
Strategic Pruning: Pinch out side shoots (axils) regularly. To ensure the remaining fruits reach their “giant” potential, consider limiting the plant to 4 or 5 trusses.
-
Consistent Watering: To prevent blossom end rot or fruit splitting (common in large varieties), keep the soil moisture levels consistent. Avoid the “flood and drought” cycle.
Usage & Kitchen Notes
The Gigante Liscio is the “steak” of the tomato world. Its dense, non-watery flesh makes it incredibly versatile:
-
The Ultimate Slicer: One slice is often large enough to cover an entire piece of sourdough or a burger bun.
-
Sauces & Salsas: Because it has fewer seeds and less water than cherry or salad tomatoes, it cooks down into a thick, rich Neapolitan-style sauce very quickly.
-
Caprese Salad: Pair thick slices with high-quality buffalo mozzarella, fresh basil, and a drizzle of balsamic glaze for a show-stopping starter.
